The passion for cooking and the sea came together in the exciting Gourmet Race in Spain, a unique competition where chefs from different boats compete while sailing the same course. The creativity and talent of each chef are put to the test with a surprise ingredient. This year, a delicious fish known as "lecha" took center stage.

Interview with Patricio, Chef aboard Mister Corn

1. What inspired you to become a chef, and how did your culinary career begin?

What inspired me was the need to eat well during our transatlantic voyages. Spending long periods at sea, you meet many people who know a lot about cooking.

 

2. How would you define your culinary style, and what influences have shaped your way of cooking?

My style focuses on a variety of spices and quality Mediterranean ingredients. My main influence has been traveling, discovering, and enjoying local cuisine.

 

3. What is your signature dish, and what makes it so special?

I don’t have one specific signature dish, but I really enjoy cooking fish and seafood. If I had to choose one, it would be a delicious lecha fish stew with onions.

 

4. What is it like cooking aboard a boat compared to a traditional kitchen?

Well, I don’t have much experience cooking outside of a boat, but on board, it’s all about adapting. You need to work with the weather conditions and make the most of the ingredients you have available at the time.

5. How did you prepare for the Gourmet Race, and how did you handle the pressure of cooking while sailing?

We’ve been participating in the Gourmet Race for several years now, and it’s always a great day with friends. For us, it’s more about having fun and enjoying the experience than feeling pressured.
 

6. The surprise ingredient this year was lecha. How did you decide on your dish, and what techniques did you use?

I really like lecha, the fish we used that day—it’s great for ceviche and marinades. That’s why we decided to make a lecha fish stew with onions.

 

7. What does winning the competition aboard Mister Corn mean to you?

Winning aboard Mister Corn was an incredible high, and it felt like a tribute to Mr. Alfredo, our shipowner, who has been very important in my journey. I’m sure he would have been thrilled.

 

About the Holidays

8. What did you prepare for Christmas? Is there a special dish you would recommend to surprise your guests?

Christmas is a time for family, so I prepared a slow-cooked pork leg marinated with herbs and spices, a very flavorful dish from Ecuador. Merry Christmas!
